Chef Tim will guide you in the fundamentals of the pastry & baking arts. You will focus on a different aspect of the professional pastry kitchen. Classes are designed to teach the technical art and science of preparing and baking pastries.
All of our classes are "hands on", meaning you will learn both by observing Chef Tim's demonstrations, and then preparing the products yourself!
When possible, classes will focus on seasonal ingredients. Working closely with local farmers & artisanal producers, Chef Instructor Tim Muehlbauer will source as many sweet, savory & seasonal ingredients as possible.
Menus will be determined closer to the date of each class based upon what is at its peak of perfection. Trust us; it’s going to be fantastic!
Examples of possible creations:
Farm House Goat Cheese Tart, Wild Flower Honey Plum Vinaigrette, and Glorious Garnish Celebration Mix
Heirloom Tomato Celebration Salad, with White Balsamic Bronze Fennel Seed Dressing
Roasted BC peaches, Caramel and Cream Layer cake, BC Autumn Berries, Cashew Brittle, Warm Anglaise Sauce
BC Apple Torte, Gooseberry Red Currant Sherbet
In the months where local ingredients are not available, classes will focus more on the fundamentals of baking and pastries.

Cakes & Decorating
Plated Desserts
All classes are held at Northwest Culinary Academy of Vancouver (2725 Main Street, between 11th and 12th Ave).
