Week 1 - The Fundamentals

In the first week of our immersive three-week Plant-Based Boot Camp cooking course, we lay the foundation for your culinary journey. From honing essential knife skills to masterfully slicing and dicing a vibrant array of vegetables, we ensure you're equipped with the tools for success. We delve into crucial cooking techniques, allowing you to transform humble ingredients into culinary masterpieces. Week one also introduces you to the major plant-based food families, from versatile vegetables and hearty grains to protein-packed legumes, umami-rich mushrooms, and nutrient-dense seaweeds. We explore the world of herbs, spices, nuts, and wild greens, unlocking the secrets to creating flavor-packed, plant-powered dishes. Get ready to embark on a transformative adventure in plant-based cooking!


Week 2 - Around The World (Italy, Latino, Thai, Middle East, and India)

Traverse the rich tapestry of flavors from Italy, savoring the harmonious marriage of fresh herbs, ripe tomatoes, and robust olive oil. Next, we dance to the vibrant rhythms of Latino cuisine, exploring the bold flavors of peppers, cilantro, and zesty lime. We then journey to Thailand, discovering the intricate balance of sweet, spicy, salty, and sour in Thai cuisine. From there, we venture into the aromatic world of Middle Eastern dishes, where fragrant spices and sumptuous grains take center stage. Finally, we dive into the intoxicating aromas of Indian cuisine, where a symphony of spices ignites the senses. Week two is a global celebration of plant-based flavors, inviting you to explore and master the culinary traditions of the world.

Week 3 - Nut Cheeses, Desserts & more (fermentation, nut cheeses, desserts, sourdough and menu development.)

In the dynamic third week of our three-week Plant-Based Boot Camp cooking course, we delve into the art of fermentation, unlocking a world of probiotic-rich, flavor-enhancing techniques. You'll learn to craft indulgent nut cheeses, elevating your plant-based creations to new levels of taste and texture. Dive into the sweet realm of plant-based desserts, discovering delectable treats that satisfy every palate. Delve into the ancient craft of sourdough, cultivating a deep understanding of this time-honored bread-making tradition. To culminate our culinary journey, we focus on menu development, honing the skills to curate balanced, inventive plant-based dishes that delight and inspire.

Tuition includes apron, Northwest Method textbook, video package.  We make, on average, three dishes per day, often with left-over to take home.
