This intensive bootcamp introduces the core principles, habits, and techniques that shape how skilled cooks and professional chefs think, move, and work in the kitchen. Cooking well is not about collecting more recipes. It begins with understanding the fundamentals—and then practicing the details with precision, consistency, and purpose.

In this first week, students build the essential skills that separate casual cooking from confident, controlled cooking: knife handling, sharpening and honing, mise en place, heat control, pan selection, flavour development, seasoning, timing, organization, and plating.

Drawn from our professional culinary curriculum, this course is not watered down. Students learn the same foundational methods used to train aspiring chefs, adapted for beginners and motivated home cooks who want to build real skill, confidence, and kitchen fluency.

WEEK 2:  Meats, Fish, and Sauces

Designed for motivated home cooks who want to cook proteins with confidence and understand the sauces that complete a dish.

Cooking meat and fish to the right doneness is one of the biggest challenges for home cooks. This intensive bootcamp removes the guesswork by teaching students how to understand different cuts, choose the right cooking method, control heat, season properly, and recognize doneness with greater confidence.

Students explore basic butchery, meat anatomy, dry-heat and moist-heat cooking methods, fish cookery, and the way proteins react to salt, acid, and heat. At the same time, they learn the foundations of sauce-making, including stocks, reductions, pan sauces, demi-glace, emulsions, and classic accompaniments.

WEEK 3:  ITALY

Designed to understand and appreciate the nuance, restraint, and technique behind one of the world’s most beloved cuisines.

Italian cooking is often described as simple, rustic, and ingredient-driven—but doing it well requires discipline, precision, and feel. This week teaches students how to look beyond the familiar dishes and understand the details that make them work: proper dough texture, balanced sauces, well-developed stocks and sugos, handmade pasta, careful seasoning, and the right relationship between ingredient, technique, and tradition.

Students explore a range of Italian classics, each a lesson in judgment—how something should feel, taste, smell, reduce, stretch, fold, simmer, or bake.

Designed to explore the ingredients, spices, techniques, and flavour structures that define some of the world’s most vibrant cuisines.

This week moves beyond the European kitchen to explore the bold, layered flavours of Asia, India, Latin America, and Spain. Students learn how different culinary traditions build flavour through spices, aromatics, chiles, herbs, acids, fermentation, marinades, rice, noodles, breads, salsas, chutneys, and dipping sauces. The focus is not only on learning new dishes, but on understanding how each cuisine creates balance, contrast, heat, freshness, richness, and texture.

Students prepare a wide range of dishes designed to expand students’ palates, sharpen their technique, and help them cook with greater confidence across a broader world of flavour.
